Preserved "Le Parfait" jars and old style terrine...
In the French countryside families, pigs were tradionally slaughtered in the winter to produce good food to last possibly until the next winter's slaughter. Beside the compulsary hams, boudins or sausages, some of the meat was salted or smoked and a good proportion was preserved in jars under the shape of "pâtés". The winter time was also sometimes offering abundant game and the idea came naturally to make pâtés mixing pork and wild boar, deer, birds or hare. Any wife of a hunter bringing back several times a winter a big bag of pheasant or a full deer should be able to prepare his own pâtés. This will clear up the deep freeze and will put on the shelves ready to use delicacies perfect for snacks, picnics or unexpected visiting friends.
Game pâté cooking classes
You will learn how to make very simple or sophisticated fresh terrines and preserved jars. How to assemble different meats and venison or birds that will match well together. How to add foie gras for a fancier version. How to control the salt, spices and herbs. How to obtain a nice good tasting meat jelly around your pâté. How to make make nice variants from the same base, playing on different brandies, incorporating dry fruits or wild mushrooms. How to buy, use and preserve the different jars available on the market.
Schedule & Location
The classes will take place over a big half day (morning or afternoon at your best convenience). A family style lunch will be served and this will be the occasion to learn some other small tips of French cuisine. Classes can be given near Paris, in the countryside near saint Germain en Laye -reachable by metro or taxi- or also at a chateau in Normandy, in the backcountry of Deauville and Honfleur. This version requires to stay there overnight.
Prices
The price is 75 euros per person based upon a group of 4 persons. Additional persons up to 6 guests at 50 euros per person. We offer classes for individuals or couples at 300 euros per group. Our cooking school package near saint Germain en Laye includes the class and the lunch. For a session in Normandy, we will make on your request a special quotation based on the size of your group and the duration of your stay.
